Hiro Ikegaya is a legendary Japanese cuisine chef and a true icon in Portland, Oregon. You know you're in for a special treat when you seat in front of him, for Omakase on Fridays and Saturdays, with two seatings - 5pm and 7pm by reservation only. 

At 74 years old, Hiro Ikegaya has had an illustrious career in the culinary world, and his passion for sushi making is evident in every dish he creates. Hiro’s journey began when he was just 20 years old, working in a sushi restaurant in Japan. He honed his skills and learned from the best in the business, eventually making his way to the United States to provide a better education for his daughters. Hiro's true calling was running his own business. After some time spent in college to improve his English, he opened his first sushi restaurant in Glendale, California, and then later opened his second one, Kabuto, in Hollywood.

Following his restaurants' success, he moved to Portland, OR in 1991. He quickly began making strong connections with the best sushi chefs in town while working at Bush Garden, a well-known sushi restaurant at the time. Later that same year, he opened his own restaurant in Lake Oswego, Hiro Sushi. He gladly served delicious sushi there for 16 years before opening up his next restaurant, a more upscale sushi restaurant in the pearl district. He had high hopes for his restaurant but unfortunately had to close it five years later when the economic crash of 2008 happened. But that didn't stop Hiro Ikegaya from his desire to share delicious food with others.

Hiro Ikegaya grew up in Sapporo, Japan, where they're known for their delicious ramen, so he decided to open a smaller, more affordable restaurant that reminded him of the delicious ramen he grew up eating, which is when Mirakatei's journey began.

In 2019, Hiro Ikegaya proudly sold Mirakutei to brothers Nico and Job Martinez. Since then, they have expanded the small space into a more inviting area while upholding the restaurant's reputation as one of Portland's top sushi and ramen shops. Hiro Ikegaya’s dedication to his craft and customers is second to none. He has always been interested in the traditional way of making sushi, and his commitment to quality, discipline, and strictness ensures that whatever he serves is of the highest caliber. His sushi rolls are true works of art, and his omakase-style sushi bar is a must-visit for sushi lovers worldwide.

Despite his success and numerous accolades, Hiro Ikegaya remains humble and dedicated to his craft. He opened Mirakutei when the economy struggled but never gave up on his passion for creating delicious, affordable food. And now, as he approaches retirement, he continues to work weekends at Mirakutei, offering customers a chef's choice style of sushi and connecting with patrons to share the rich history of Japanese sushi making.

Hiro Ikegaya is a true legend in the culinary world. His impact on Portland's food scene will be felt for years after building multiple top sushi restaurants across different states, learning and working with televised master chefs, and creating top-tier eating experiences.
